Ahead of World Whiskey Day in March, we held a whisky competition for the Duty Managers at our training day in February 

With all sites competing the competition was fierce 

The Winners were Hayden from the Broadway and Paul from the Foresters

Head Chef Development Day 

In January our Head Chefs got together to develop ideas for our Spring Summer Menus 

Throughout the day they were very creative, looking at seasonality, new vegetarian and vegan options and an update to our pudding menus

The teams all around the estate got very into Christmas Jumper Day this year, Katherine from our admin team is the queen of Christmas and made sure we’re all in the festive spirit!

Nathan passed his apprenticeship 

We’re so proud to announce that Nathan has passed his Level 2 Commis Chef Apprenticeship 

He’s worked incredibly hard over the past two years, learning new skills, completing coursework and his final practical 

 

We offer apprenticeships at all levels across the business, we currently have one housekeeper, one manager and a brewer completing apprenticeships

In October all of our suppliers met the team at the Broadway and displayed new products that are arriving in the next few weeks and veg that is coming into season 

 

We had a fabulous day, tried lots of new products, keep your eyes peeled for some amazing produce coming to our menus soon

Team building structures with marshmallows

This month at our Duty Manager Training day the team put their structural skills to the test, to see who could build the tallest, soundest structure out of spaghetti and marshmallows, the ladies in the team pictured were ultimately the winners! (it did get alot taller!)

In November we had our pre-Christmas GM meeting followed by a social out in London. We went to Birdies in Angel where some of us where much better at golf than others!

International Chefs Day 2022 

Celebrating all of our amazing chefs across the business, with so much creativity and skill we’re so proud of our kicthen teams  

Head Chefs Day Out 

Earlier in October, all of our Head Chefs got together to start thinking about our New Years Eve offers & Spring menus 

We went out for a group game of golf after, luckily we’re better at cooking than we are at golf 😉 

The Quay Street Whalers came to play at the Jolly Sailor. The band is made up of people from Orford village and the whole village gets involved

Chester came to visit! 

We have a huge passion for D’arenberg wine so were obviously very excited when Chester cam over from Australia to visit

At an event very kindly hosted by Enotria at SIX in Cambridge our senior team got to spend some time with Chester, learning all about the wine making, stories behind the wine and the different grape varieties

This summer we added dog ice cream to all of our menus, as you can see it’s a real hit with our four legged friends! 

August brought alot of specials competitions, from vegan starters, desserts & seafood

Rusty Gun Pig Fest

August Bank Holiday saw the Rusty Gun host their second pig race of the summer 

 

With plenty of races throughout the afternoon, games & fun in the sun for all of the family 

 

Our Kune kune pigs love running after food, chasing each other and chasing a football! 

July 2022

This July we took the keys to a brand new site – The Jolly Sailor in Orford. 

With 4 boutique bedrooms, a beautiful garden and orchard as well and an interior full of character and charm. This pub has been here since the 17th century and we’re so proud to be part of its history. 

Whether you’re visiting via the water, we’re a stone throw from the quay or escaping the countryside the Jolly Sailor is full of charm and history. Bob our Head Chef has been working hard on a fresh seasonal menu making the most of all of the wonderful produce Suffolk has to offer. 

July saw us opening with a roaring start, and once the team have found their feet we can’t wait to show you what we can do! 

June 2022

There was lots to celebrate in June! All of the pubs got behind jubilee with some super creative dessert specials, live music and tributes to the queen 

The Wellington also participated in the Welwyn Oscars where the team were nominated for an award for their free meals for school children during lockdown 

Unfortunately we didn’t win but were beaten by a worthy cause! Congrats to team Tesco! 

May 2022

Alot of things happening this month as we get ready for a busy summer season! 

We’re very proud to say The Wellington has maintained their 5 star AA rating and 1 rosette status – Congrats team! 

 

This month we also hosted another Masterclass. This time on Bread. Kristof the Head Chef from Stolen taught our CDP’s all about pizza dough, bread & bagels!

Fish Masterclass

This month our training focus for the kitchen teams was all things fish! Jack our kitchen leader taught the teams all about how to look after, prepare & cook fresh fish & shellfish. We learnt how to fillet seabass & plaice, break down a whole salmon and prepare scallops
